is it bad that aquarium plants roots are exposed?
Also I just added a black background to my tank and the fish seemed more relaxed?

That depends on the plant. Some plants do best buried in the substrate while others will die if you do that. A background will often help fish be more comfortable because they feel more secure with one or more sides enclosed.
You shouldn’t take chances, the fish might eat the roots.
